What Makes New York-Style Pizza Different (And Why Ours Is Authentic)

The sauce matters too. Ours is a simple, uncooked tomato sauce โ San Marzano-style tomatoes, garlic, olive oil, salt, and a touch of oregano. We don't cook it before it goes on the pizza because the sauce cooks in the oven along with the pie. This keeps it bright, fresh, and vibrant instead of the heavy, over-reduced sauce you get at most chain places. And the cheese? Low-moisture, whole-milk mozzarella, shredded and applied generously.
